Russian Chicken Barley Soup Recipe

Easy to make simply delicious rich with nutrients soup for the healthy lifestyle.

Prepare your own healthy chicken broth:

Wash then boil for about 5 min 2 raw chicken wings or 1 raw chicken leg in a small amount of water, take it out and wash the chicken once again. Place the chicken in 3 quarts of boiling water, salt it, boil for 1 hour. Take the chicken out. Chicken broth is ready.


1/2 medium onion, chopped

1 carrot

2-3 medium pickled cucumber (not sweet), chopped

4 medium size diced red potatoes

2 1/2 quarts chicken broth

3-4 cups cooked barley

3 black peppercorns

3-4 medium size bay leaves


To a boiling chicken broth add 3-4 cups of cooked barley, 1 whole carrot, and diced potatoes, boil for 20 min. Meantime fry in butter or olive oil chopped onion till it becomes golden- brown. If you add pickles and potatoes to the broth at the same time potatoes will remain hard and inedible, therefore add chopped pickles and fried onion in about 20 min after potatoes and carrot. Add bay leaves and black peppercorns. Check if there is enough salt, if not, salt again. Boil the soup for 10 min. Russian Chicken Barley Soup is ready to be served.
