Sausage Potato Chowder

This is a hearty filling soup. In fact, it could be a meal.

1 lb bulk Italian sausage

2 1/2 cups peeled and diced potatoes

1/2 cup chopped onion

1/2 cup chopped celery

2 cups chicken broth

1/4 teaspoon pepper

3 1/2 cups milk

1/4 cup flour

2 cups shredded Cheddar Cheese

Brown sausage breaking it up into small pieces as it cooks.  Set aside.  In a large saucepan, combine potatoes, onion, celery, chicken broth, and pepper.  Cover and bring to boil.  Continue to boil just long enough to cook the potatoes. Add sausage and 2 1/2 cups of milk.  In a shaker or a jar with a lid, shake flour and remaining milk until blended.  Add to soup stirring constantly until mixture begins to boil.  Simmer about 3 minutes.  Remove from heat.  Stir in cheese until melted.
