Savory and Simple Spanish Rice

Spanish Rice has many flavors and tastes in the various recipes, however I have created and used this particular recipe for a long time and find the complimentary flavors make this simple recipe both savory and and tasty.

Spanish Rice has many flavors and tastes in the various recipes, however I have created and used this particular recipe for a long time and find the complimentary flavors make this simple recipe both savory and tasty.  I particularly like the Oregano in this recipe and this Spanish Rice can be paired with tacos, enchiladas, tamales and even pork roasts! This rice is versatile and yet unique and can be used along with black beans with your entree.

SPANISH RICE

2 Tablespoons Olive Oil (up to 1/4 cup)

1 Onion, chopped fine

1 Garlic Clove, minced

2 Cups Long-grain White Rice

4 Cups Chicken Broth/Stock

1 Can Diced Ripe Chopped Tomatoes 

1/4 Tsp. Oregano (or more)

DIRECTIONS:

In a large skillet brown rice in olive oil, on medium/high heat.  Add onion and garlic.  Cook this mixture, stirring frequently, until onions are softened and rice is slightly brown. Slowly add chicken broth, bringing to a full boil.

Add tomatoes and oregano rice to broth, bringing to a boil.  Simmer and cook covered on low heat for approximately 20-25 minutes until liquid is absorbed and rice is soft and fluffy.  Turn off heat and let sit for 5 minutes.  Garnish with fresh cilantro, if so desired.

***I use no salt, but that is my preference

    Recipe sounds easy to do. This will be a nice change from the plain rice I usually cook.
