Savory Garlic and Tomato Soup

Made with fresh ripe tomatoes, this is the perfect soup for gardening season.

Ingredients

 

  • 6 large ripe Tomatoes chopped
  • 1 tbsp Extra Virgin Olive Oil
  • 3 Shallots minced ( sweet onions work just as well)
  • 1 entire head of Garlic chopped
  • 1 tbsp Sugar
  • 1 tbsp fresh cracked Pepper
  • ½ tsp oregano
  • sprigs of Dill, Parsley or Basil leaves
  • 1/4 cup Dry White Wine

Method

 

  1. Heat oil in a large pot
  2. Add shallots, tomatoes and garlic
  3. Cook over medium heat until shallots are tender
  4. Allow soup to cool a little
  5. Blend with a hand blender until almost smooth
  6. Add sugar, salt, pepper and wine and cook for 15 minutes more on medium heat

Serve hot, garnished with sprigs of dill, parsley or Basil leaves.

    I’ve always loved tomato soup, but have never tried it with garlic. This mix sounds great.
