Sea Bass Stew

Ingredients
- 1lb back bacon rashers
- 3lb sea bass fillet (cubed)
- 3 onions (sliced)
- 8 celery sticks (sliced)
- 1lb carrots (sliced)
- 1pt fish stock
- bay leaves
- 1 3/4lb canned plum tomatoes (chopped)
- 4 large potatoes (cubed)
- salt and freshly ground black pepper
Preparation
Start by dry frying the bacon slowly in a large frying pan and reserve the grease. Next steam the sea bass over one pint water for 15 minutes. Then in a large casserole dish, saute the onions in the reserved bacon grease until light golden brown.
Now add the celery, carrots and fish, and stir lightly to coat. Pour in the fish stock and one pint water. Then add the bay leaves and tomatoes, and season with salt and pepper. Bring to a boil, add the potatoes, reduce the heat and simmer for about 40 minutes, stirring occasionally and serve.
