Seafood and Tofu Soup
A really delicious and "incredible" soup to have on your table.
Seafood and Tofu Soup

Ingredients:
10 uncooked medium prawns, shelled and deveined, tails left intact
125 g squid (fresh or Frozen), cleaned
½ teaspoon salt
½ teaspoon sugar
½ teaspoon cornflour
¼ teaspoon freshly ground black pepper
¼ teaspoon sesame oil
185 g firm white fish fillets, sliced
1 tablespoon vegetable oil
3-5 thin slices fresh ginger
300 g tofu, sliced
1 small carrot, sliced
2 teaspoons chicken stock powder
2-3 spring onions, cut into 2.5 cm (1 in) lengths
Procedure:
Cut prawns in half lengthwise. Make a single cut down the length of each squid tube or body and open out. Using a sharp knife,, cut parallel lines down the length of the squid, taking care not to cut right through the flesh. Make more cuts in the opposite direction to form a diamond pattern. Cut each piece into 3 or 4 pieces.
2. Place salt, sugar, cornflour, black pepper, sesame oil and 1 tablespoon water in a bowl and mix to combine. Add prawns, squid and fish, toss to combine and set aside to marinate for 10-15 minutes.
3. Heat vegetable oil in a wok or large saucepan, add ginger and stir-fry for 2-3 minutes or until fragrant. Stir in 3 cups (750 ml) water and bring to the boil. Add seafood mixture, tofu, carrot and chicken stock powder and cook for 5 minutes or until seafood is cooked. Remove pan from heat, sprinkle with spring onions and serve immediately.

I remember the Krua Thai restaurant in SM Cebu, we have soup with tofu on it. I like it.
