Shiitake Egg Drop Soup

Fresh mushrooms Recipes.

Mushrooms are the most common ingredients in cooking soup, noodles and meat dishes. Consider the following tips in order to enjoy mushrooms better.

·         Just lightly rinse fresh mushrooms in water. Do not soak, or you’ll be left with soggy mushrooms.

·         Use them at once, as they tend to discolor and become slimy when kept long.

·         No need to add too much water when cooking mushrooms, as they release their juices while cooking.

SHIITAKE EGG DROP SOUP

 

Ingredients:

5 cups chicken broth

1 cup diced uncooked chicken

½ cup sliced fresh shiitake mushrooms

2 eggs

1 teaspoon sesame oil

Salt and pepper to taste

Procedure:

1.      Bring the chicken broth to a boil.

2.      Add the chicken and simmer until cooked.

3.      Add the mushrooms. Season to taste.

4.      Beat the eggs in a bowl then stir with fork into the hot soup.

5.      Drizzle with sesame oil.

Takes 20 minutes

Makes 4 Servings

    I tasted this soup abroad and it’s super-tasty, especially the shiitake mushrooms. Good recipe.
