Simply Golden Pumpkin and Dried Shrimp Recipe

A commonly suggested way of preparing pumpkin from my parents. Suitable for the whole family. Dare to try out this oriental cooking?

Pumpkin is among the cheapest vegetable we could find in the market.  It is nutritious yet delicious.  There are many recipes for cooking pumpkin. 

It is widely used in the western countries for soup and cakes as well as dessert; while in the eastern countries, we normally include it in porridge, cook as one of our dish with pork, chicken or dried shrimps, I believe there are many more recipes too.

It is from my parents that I got the idea of cooking it with dried shrimp.  The taste of sweet (pumpkin) meet salty (dried shrimps) combination.

The ingredients that we need for this bowl of golden pumpkin and dried shrimp is simply :

Ingredients

  • some garlic
  • 2 tbsp of cooking oil
  • a handful of dried shrimps, wash them with water (avoid using hot water or else the shrimps will smell fishy)
  • half small to medium size pumpkin, cut into cube
  • 2 cups of water
  • salt, pepper and oyster sauce to taste.

Method

  1. Heat cooking oil in the frying pan with medium fire;
  2. add in garlic and dried shrimps, fry for 30 seconds or till fragrant;
  3. add in the cut pumpkin, stir fry for 2 minutes;
  4. and in water, salt, pepper and oyster sauce;
  5. lower the fire, cover the frying pan and let it cook till the pumpkin become soft, stir occasionally.
  6. dish out and serve.
