Smothered Chicken Dishes

Southern good smothered chicken dishes. These are some recipes to prepare for the whole family to enjoy.

Smothered Chicken

4 whole boneless skinless chicken breasts

12 ounces mushrooms – fresh or canned

1 can cream of mushroom soup

1 can cream of chicken soup

1 can french onion soup

Celery – chopped

1 cup of Corn (optional)

Cut chicken breast into stew size chucks, and sauté while washing and cutting mushrooms in half.  If you opted for the canned mushroom pour the water off of the canned mushrooms, and rinse mushrooms off.   Then simply put ingredients in with chicken and simmer about 1 hour.  You can also do this in a crock pot and simmer all day until dinner time.  Serve over rice, or noodles if you prefer.

 

Smothered Chicken with Pierogies

1 dozen frozen potato and cheddar cheese Pierogies

1 can (10 ¾ oz) low fat cream of chicken soup

1 can (4 oz) sliced mushrooms, drained

1 cup frozen peas

2 cups cubed or shredded cooked chicken

Preheat oven to 350*.  Spray a 2-quart casserole with nonstick coating.  Thaw Pierogies in boiling water for 5 minutes, drain and place in the casserole dish.  In a large saucepan, combine soup, mushrooms, peas, and chicken.   Cook, and keep stirring for about 5 minutes or until heated through.  Pour over Pierogies. Bake 15 minutes.
