Soup
Soups have always been an integral part of most of our daily diets. Be it a normal routine meal.
TOMATO SOUP

Ingredients : Tomatoes – 250gms. chopped, Garlic – 1 tbsp. chopped, Olive oil – 1 tsp., Butter – 1 tsp, Butter – 1 tsp, Salt and pepper to taste, Mixed herbs – 1tsp, Fresh basil – 2 tbsp. chopped, Sugar a pinch, Stock or water – 1 liter, Refined flour – 2 tbsp., Cream – 2 to 3 tbsp.
Method :
Heat oil and butter in a pan, add in the flour and mix well, add in the garlic, tomatoes and herbs and mix well. Add in a pinch of sugar, fresh basil, stock and bring to a boil. Simmer for 8-10 minutes. Cool puree and strain the soup. Add in some cream or white sauce for a creamy texture. Garnish with some fresh basil and cream and serve hot.
GREEN PEA SOUP

Ingredients : Green peas – 250gms., Chicken sausages – 100 gms. cut into slices, Oil – 1 tsp, Butter – 1 tsp. Chopped garlic – 1 tsp, Chopped onion – 1 tsp, Refined flour – 2 tbsp., Veg. stock – 1 liter, Salt and pepper to taste, Mixed herbs to taste.
Method :
Heat butter and oil in a pan, saute the garlic and onion add in the peas, saute it well for a few seconds. Add in the refined flour and seasonings, herbs, stock and boil. Simmer for 10 minutes. Remove, cool and puree the mixture. Serve hot garnished with cream and some parsley or mint.
