Stuffed Pepper Soup

Very easy and delicious soup that everyone will want the recipe for.

Ingredients

2lbs ground beef
2pkgs pepper and onion stir fry**
1cup uncooked rice
46oz. can V8
2)28oz.cans diced tomatoes
1/4cup brown sugar
salt to taste
pepper to taste
garlic powder to taste
onion powder to taste
2Tbs. beef base
water as needed
*may use 2 med. onions, and 5-6 peppers cut up.

Directions

Cook rice as package directs. Meanwhile brown and drain beef, add all other ingredients and simmer, add rice when rice is done(approx.20 min). Let simmer for about 20-30 minutes. Soup will thicken, and may add water as needed. I like to add additional beef base as needed also.
First time I made this,and didn’t realize how much soup this makes, and took the rest to work for everyone. Everyone wanted the recipe,and am asked to make it many times.
