Sweet and Sour Veggies

This is a great recipe cause you can pretty much just choose what ever vegetable that you like and put it in the sauce. But,here is how I do it usually.

1/2 cup water

1 cup white sugar

1/2 cup red wine vinegar

1 tablespoon celery seed

1 small red onion thinly sliced

2 large cucumbers chopped

6 Roma tomatoes sliced

1 green bell pepper diced

1 red bell pepper diced

1 orange bell pepper diced

In a sauce pan over medium heat mix water, sugar, vinegar and celery seed.  Stir until the sugar is dissolved

In a medium size mixing bowl, layer the red onion, cucumber, green red and orange bell peppers.  Pour the sugar mixture over the vegetables, cover and refrigerate over night.
