Tex Mex Chicken Tortilla Soup
Enjoy this little southwestern delight with homemade tortilla chips, if you dare!.
Ingredients
- 1 lb boneless skinless chicken
- 3 large garlic cloves (finely chopped)
- 1 onion (finely chopped)
- 1 bushel Cilantro (rinsed and chopped)
- 2 large jalapenos remove veins and seeds (finely chopped)
- 1 can red beans (strained and rinsed)
- 1 can black beans (strained and rinsed)
- 1 can pinto beans (strained and rinsed)
- 2 large tomatoes chopped
- ½ bag frozen corn
- 1 large bay leaf
- 1 tbs cumin
- 1 tsp cracked pepper
- 1 ½ tsp Lawry’s Seasoning Salt
- 4 cups water
- 2 cups shredded cheese
- 1 container sour cream (I use Mexican Cream)
- 1 can Graber Olives
- 1 bag tortilla chips
Method
Brown turkey with onion and garlic. Add water, bay leaf, cumin, Lawry’s salt, pepper and boil for about ten minutes. Add beans, tomatoes and corn. Let simmer until flavors blend, at least I hour. Serve in individual bowls and top with cilantro, sour cream, olives, jalapeno and corn chips. .
Serves 8 – 10
