Thailand Cuisine: Spicy Coriander Fish Cook in Microwave

The coconut and fresh coriander blended with green chilies gives the spicy taste of Thailand’s cuisine. It’s easy to cook in microwave.

Ingredients: 

200 grams or ½ coconut, scrape off outer skin and cut into small pieces

6 cloves garlic

3 green chilies

1 teaspoon ground cumin

½ teaspoon sugar

50 ml water 50 grams fresh coriander

1 lime

2 tablespoons white vinegar

1 tablespoon vegetable oil

Salt to taste

4 – 3 cm thick fish steaks (any white firm fleshed fish)

Garnish: Lemon slices

Procedures:

1)      Blend coconut flesh with garlic, chilies, cumin, sugar and water in food processor

2)      Using on/off turns, until mixture resembles coarse meal.

3)      Add coriander, lime juice, white vinegar, oil and salt.  Grind to a paste.

4)      In a circular dish, arrange the fish steaks.  Coat fish steaks with paste.  Cover with cling film and cook on HIGH for 10 minutes until fish is just cooked.  Leave to stand for 2 minutes.

5)      Garnish with lemon slices before serving.

Note: Try something new with other herbs instead of fresh coriander.
