Tomato and Carrot Soup Recipe

Ingredients
- 14oz canned tomatoes (chopped)
- 2 large carrots (grated)
- 1 small onion (finely chopped)
- 10fl oz vegetable stock
- 1 teaspoon oregano (dried)
- pinch of nutmeg (grated)
- pinch of salt
- 1 bay leaf
- 1 tablespoon flat-leaf parsley (fresh chopped)
Preparation
Start by placing all the ingredients except the parsley in a heavy saucepan and bring it to a boil, stirring occasionally. Next Reduce the heat and partially cover the saucepan. Simmer the tomato and carrot soup for about 30 minutes. Finish by discarding the bay leaf. Then ladle the soup into bowls and serve hot, garnished with the parsley.
