Tortellini Soup

It’s soup season, and this one is great for this cold winter.

Ingredients

  • 2 cloves of garlic crushed
  • 1 tablespoon of margarine
  • 2 cans of chicken broth or beef
  • 8 ounces of frozen or fresh cheese tortellini
  • i can of chopped undrained spinach
  • 1 can stewed tomatoes, undrained and cut up
  • for garnishment you can add some grated parmesan cheese

Preparation

In a large sausepan, over medium heat, cook garlic in margarine for like 2 or  3 minutes. Add broth and tortellini. Heat to a boil; reduce heat; simmer for like 10 minutes or so. Add the spinach and tomoatoes; simmer 5 minutes more and than you can serve with a little bit of grated parmesan cheese.
