Turkey Tomato Rice Skillet

Easy quick meal for those busy or lazy evenings.

Cooking time: 25 minutes Servings: 6

1 pound ground turkey

1cup chopped celery or spinach

2/3 cup chopped onion

1/2 cup chopped green pepper or any other peppers you have on hand

1 can reduced-sodium condensed soup, undiluted

1cup water

1 teaspoon Italian seasoning

1cup uncooked instant rice

1. In a large skillet over medium heat, cook the turkey, celery or spinach, onion and peppers until the meat is brown and vegetables are cooked. Then add the rest of the ingredients, bring to a boil. Stir in rice, and then  remove from heat. Make sure the lid of the skillet is on.  Let it stand for 10 minutes, until the rice is done.
