Vegetable Soup

2 to 2 1/2 pounds lean meaty short ribs of beef-wash
2 quarts boiling water with 1 tablespoon
Simmer meat 2 1/2 to 3 hours. Then start adding vegetables and boil about 3/4 to 1 hour.
About 1 quart diced celery
3 to 4 medium onions
1 pint diced carrots
1 cup tomato juice
Then add 1 pint chopped cabbage and 2 good sized potatoes. cook about 30 minutes. Then add 1 each small can corn, peas, green beans, baby limas. Boil about 5 minutes. More salt and pepper as needed.
