Vegetable Soup
A delicious soup packed with vegetables and low in fat.All you’ve to do is toss all the ingredients in a pot and simmer.
Ingredients
serves 6
- 6 cups chicken stock
- 250 g fresh tomatoes(chopped)
- 1/2 cup tomato puree
- 1 cup water
- 1 cup kidney beans(boiled)
- 1 cup sweet corn
- 1 cup carrots(sliced)
- 1 cup cut green beans
- 1/2 cup spring onions(diced)
- 6 corn tortillas( minced)
- 1 tsps red chili powder
- a dash of garlic powder
- 2 tbsp lemon juice
- salt to taste
- 1 1/2 tsp black pepper
Garnish
- 1 cup cheddar cheese(grated)
- 1 cup tortilla chips(crumbled)
Method
- In a large saucepan combine all the soup ingredients(along with the seasoning) over high heat.
- When the soup starts to boil, reduce the heat and simmer until the soup thickens and tortilla pieces have mostly dissolved.
- Pour the soup in a bowl and garnish by sprinkling a heaped tablespoon of the grated cheddar cheese and crumbled tortilla chips over the soup.Serve immediately while hot.

yummy soup. Good for vegetarians like me. Its much better than the canned ones .
