Vegetable Soup

This is the easiest vegetable soup a person can make.This is the recipe my Mom used to make home made vegetable soup. It’s also known in our family as “Good Soup”.

This recipe is so simple and so easy to make. My Mom made “Good Soup” every Sunday. I know you will love it.

Ingredients

  • 2-3 pounds of roast beef
  • 3 large cans of stewed tomatoes
  • 2 large cans of green beans
  • 1 bag of baby carrots
  • celery hearts
  • 2-3 beef bullion cubes
  • noodles (preferably Polish or Amish style)
  • crescent rolls or any type of hot bread
  • salt & pepper    

Method

In a large pot or crock pot add the roast beef and enough water to cover it. Simmer the roast beef in water & stewed tomatoes with the bullion cubes on low all day. The roast beef will be very tender. About 2 hours before serving add as many baby carrots & chopped up celery as you desire. About an hour before serving add the green beans with the juice. (Some people also prefer to add a can of corn to the recipe). Add salt & pepper to your taste. Before serving make the noodles so they are fresh. Then make some hot crescent rolls or another type of hot bread. This recipe is so simple & is the best vegetable soup I have ever had. My Mom used to make this every Sunday. After your meal you can add the remaining noodles right into the pot of soup for left overs. Enjoy!
