What to Do with All The Left Over Turkey

With thanksgiving coming to an end a lot of us are finding we have a lot of turkey left over. I have found ways to have turkey every day the following week without it seeming boring or dull or getting tired of it.

Turkey noodles

2 cups of chopped cooked turkey

1 large can of chicken broth

1 cup of water

noodles                                                       

2 tsp of vegetable oil

In a large sauce pan bring water to a boil add in your noodles reduce heat let cook for 10 to 15 minutes (if using homemade noodles allow an extra 15 minutes to cook) Next drain your noodles and put them back in the same pan adding the turkey,broth,water and oil (oil is to help keep the noodles from sticking) bring to a boil and reduce heat and leat simmer for 15 to 20 minutes stiring occasionaly.

Turkey pot pie

3 cups of chopped cooked turkey

pie crust

frozen mixed vegetables

1 large can of cream of mushroom soup (if you don’t like mushroom you can use cream of celery)

Preheat oven to 350 degrees. Grease and flour your pie pan place the first pie crust then in a large mixing bowl combine turkey,vegetables and soup and mix throughouly after everything is mixed place the second pie crust on top pinching the edges together. take a fork and make little slits all over on the top brush with a little butter for a golden brown crust. bake 15 to 20 minutes or until crust is golden brown. (Times may vary)

Turkey sandwichs

There can be an endless varitey of combinations here are just a couple to get you started this is perfect for a soup and sandwich night.

1. Turkey melt

your choice of bread

2 or 3 slices of turkey

2 slices of apples

1 slice of cheddar cheese

First butter each sides of the bread then layer the turkey,apple,and cheese and place the other top of bread and grill in a fry pan ( if you have a panni press this would perfect to do)

2. Old faishon Turkey sandwhich

your choice of bread

2 slices of turkey

your choice of cheese

your choice of condiments ketchup,mustard,mayonise

lettuce, tomato (is desired)

put together as desired and enjoy.

Turkey bacon pizza

your choice of pizza crust

pizza sauce

1 cup of sliced turkey

1 cup of chopped cooked bacon

2 cups of mozzerlla cheese

put your pizza together and bake in a 350 degree preheated oven for 10 to 15 minutes.

Turkey omlete

1 cup of chopped cooked turkey

2 to 3 eggs

butter

1/2 cup chopped onions

1/2 cup chopped green peppers

1 cup of your choice of shredded cheese

In a medium size mixing bowl beat together  turkey,eggs,onion,green pepers and cheese. Melt the butter in a medium size fry pan and after making sure the pan is hot enough pour in the egg mixture and let cook when edges are cooked and it begins to bubble in the middle gently and carefuly fold it over and let cook for another 5 to 10 mintues.
