Greek Cucumber-chicken Salad

published by A Bromley on May 16, 2012

This is a really light and delicious salad that makes a great appetizer or lunch served with a sandwich and a bowl of soup or just some crusty bread on the side and your favorite beverage. It has its own special dressing which is delicious as well and I have also used with other salads. You can easily substitute the chicken for tofu or the vegetarian like chicken and make this a really good recipe for the vegetarian as well. I’ve made this with the stir-fried seasoned tofu and it was really good. You might want to try this too.

Boneless, skinless, chicken breasts are the easiest to prepare on the grill, but the grill master must be mindful, as they cook fast and can become dry.
