This is a delicious recipe that makes a wonder light dinner or lunch. For you who are vegetarian you can easily substitute the vegetarian chicken product in place of the chicken breast and vegetable stock for the chicken stock or I have made this with cubed tofu and found it works very well also. Either way, with or without chicken, it is very tasty and good for you and asparagus is wonderfully delicious, especially while it is still young and tender in the spring time.
