While; baking cakes can be a tricky business, there is one type of cake which is pretty much foolproof, the banana cake, and the cream cheese frosting is, literally, the icing on the cake.
It is almost unheard of to grate carrots to make carrot cake, but the difference is well worth the wait. The recipe for home made frosting is also at the end of the recipe.
This recipe comes to me from my mother, and it came to her from my paternal grandmother, or her mother-in-law. If anything good came out of my mother’s first marriage (other than her beautiful, talented and stunningly modest children) it is this lovely recipe.
