Mama’s Almost Meatless Meatloaf

I tend to be a frugal cook and have taken to cooking meatloaf in a sort of ‘whatever is on sale, with whatever I have on hand that might taste good.’ I also have a garden, nut trees and the like, and things tend to get thrown in, but that is what meat loaf is for. This is a relatively healthy recipe, and filling, and my husband likes it, which is saying something. He is the pickiest man on this planet. No kidding.
