Here is a spicy cajun style chicken gumbo. Chicken is fried to a luscious golden brown in sunflower oil. Then its simmered in a spicy combinaton of green pepper, onion and red chillies.

Gumbo is the name of a dish that originated from New Orleans, Louisiana. Gumbo is made mainly with broth, meat or fish and vegetables. It can be made into a soup or stew with Shellfish, poultry, or smoked pork, all these items also easily adaptable into a well made pot of gumbo.
