This is a fabulous banana cake that goes wonderfully well for parties or family get togethers. It’s supposed to make 16 servings, but I wouldn’t count on it. I would make two or three if I expected anywhere near that many guests.

Chocolate Angel Food Cake

Angel food cake is leavened with only beaten egg whites, it doesn’t have the stability of cake leavened with baking powder or soda, Cooling it thoroughly in a upside down position before removing it from the pan allows the cake’s light delicate nature to firm up. If cooled without inverting, the cake will lose it’s volume. If removed too early it will collapse. Angel food cake can be inverted on the neck of a sturdy bottle for cooling.

Cheesy Potato Casserole

This is a good main dish for a hungry family. Add a salad and a little protein, a piece of fruit for dessert, and you have your dinner in a nutshell. Look for chicken soup without all the salt, or if you have saved chicken broth, add a little cornstarch and use it instead.

New York Cheesecake

This cheesecake is so delicious and so easy to make. Well, it is pretty easy but it does take a little time and effort. In fact I promised Lionel I would make one today, too bad I didn’t have time, but I will do it tomorrow. Make it for your family and I guarantee they will love it.

Hawaiian Wedding Cake

You don’t have to have a wedding to enjoy this delicious cake. It makes a wonderful tasting cake any time. It can be served with whipped cream instead of cream cheese frosting to save a few calories, but in my experience the cream cheese frosting is more delicious. Try it both ways and see what suits your fancy.
