At this time of year, many people celebrate Chanukkah, the Festival of Lights. It is customary in many communities to eat foods fried in oil. Traditional Latkes (Potato Pancakes) are delicious, easily made and can be eaten on any occasion.

Potato Latkes, or “potato pancakes”, are a traditional Jewish and Eastern European food. These small fried cakes are especially popular with Jews at Hanukkah and are typically made using eggs, onions, grated potatoes and maybe even a little flour.
