Gazpacho is a chilled tomato soup and it is made in several different ways depending on who you ask. It is a wonderful treat on those hot and humid summer days when you really just aren’t all that eaty but want something that is nutritious and that doesn’t mean having to stand over a hot stove or grill.

Scrumptious Shrimp Scampi

For years the only time I ever had shrimp scampi was if I was eating out in one of the more "fine dining" restaurants and then one day I came across a recipe to make my own. I discovered it really wasn’t so difficult and it was wonderfully delicious. I don’t remember just where I got this recipe. I know it was in a food magazine and I copied it off and have been using this same recipe ever since, whenever I had a craving for shrimp scampi and the money to by the shrimp fresh from the fish market. For something so good,it is really simple to make.

You will need a spiral slicer a specialty type of slicer for the zucchini. If you do not own one, and don’t want to buy it just for this recipe use either a Julienne vegetable peeler or mandoline.

My friend Roz and I often share recipes and menus, especially around the holidays. Though her grandmother is Jewish, Roz was not raised in an entirely Jewish household but she still got to celebrate all the special holidays her grandmother did as well as those from her father’s side of the family. Roz still does but now more in her own way. She like to use her grandmother’s recipes for holiday fare just about anytime and she sometimes shares them with me. This cake recipe is one of her favorites and has become one of mine too.
