My friends Susie and Willie and my children and I used to have lunch or dinner together at their place a couple times a month before they moved away. We had some wonderful times together. Quite often when we eat at their home Suzie would make this delicious salad to serve. Susie was one of my closest friends and Willie was the local fishmonger and one of my rockhounding buddies. Eggcredible EGG Salad

There is a secret to making good egg salad. First you don’t want to over cook or under cook them. For a hard boiled egg don’t cook them less than 12 or more than 15 minutes for a perfect egg. As soon as they are done remove them from the hot water to a bowl of ice water so they cool rapidly. Rapid cooling prevents the egg yolk from turning the dark.
