My mother, although very proud of her Spanish omelette recipe (which I can certainly vouch for), has been getting it wrong for years. I think she treated making an omelette as a means of using up meat and vegetables that are close to expiring, so naturally she just usually whacks everything she can in her omelette, which isn’t a terrible idea at all, but you do end up with some odd mish-mashes of random meat and vegetables that aren’t necessarily complimentary.
