Ingredients: Fowls’ or turkeys’ livers, flour, butter, parsley, onions,

salt, pepper, stock, Chablis.

Cut the livers in half, flour them, and fry lightly in butter with

chopped parsley, very little chopped onion, salt and pepper, then add.
