Pumpkin is part of the squash family and it is a very versatile vegetable (fruit) that can be used plain or in combination with other fruits and vegetables to create some very healthy and tasty dishes. One of my favorites is pumpkin soup.

This pumpkin pie is great and makes you gt that warm feeling of Thanksgiving and makes you stop to give thanks.The best part is this is no bake so you can bake it in the summer. Try it for National Pie day on march 14th. Remember everyone loves pumpkin pie and you’ll love this version! And rememeber the reason Pie day is on march 14 is because Pi in math equals 3.14!

Ingredients
1/4 tsp Baking Soda
1/2 cup Coconut Flour
one cup Pecans, chopped
six Eggs, Pastured
six Medjool Dates
1/2 cup Coconut Oil, Organic, melted
one Tbsp Pumpkin Pie Spice
1/2 cup Pumpkin Puree
one Tbsp Pure Vanilla Extract
