I’m getting into my stride with my vegetarian recipes now and came across this recipe for risotto. I do tend to “mix and match” by adding chicken, smoked fish or shellfish; adding extra vegetables such as peas, sweetcorn, mushrooms or finely chopped sweet peppers; and changing the herbs, preferring dill or tarragon with my fish instead of sage, or adding some coriander and cardamom with the chicken. It’s one of those dishes you feel you just need to tinker with!

Spicy yet yummy, you can alter the amount of chilli to suit your personal preference, and you can add different vegetables to use up what you have.
