A quesadilla makes a great lunch or a tasty appetizer to serve before your main entree. They are easy to make and they are fun to eat. This is my own creation and it came out really well. I was going to make toasted tuna rolls for lunch and found my rolls had molded but I had tortillas so I got creative and these are so good I just may give up toasted tuna rolls. The only real changes I made was I used tortillas instead of a roll and left out the mayonnaise. It is simple, easy and good. You can use whatever cheese you like but I like Pepper Jack or Cheddar with Tuna. The compliment each other well.

If you love salsa then this is a must try recipe! Tomatillos are a curious looking fruit that is treated like a vegetable for cooking. Tomatillos are wrapped in a brittle husk that must be peeled away before cooking…

Hash browns are shredded butter fried potato with seasoning. They are a tasy side to any meal of the day but especially get your day off to a good start when served at breakfast. (My opinion)

The following is a recipe for chicken tenders that my friend Jan shared with me that she found on the back of a potato flake box years ago. It is a simple, easy to follow recipe made with chicken, potato flakes and grated cheese and Italian seasoning and these tenders are so good; one I think you will really enjoy.
