I love pesto stirred into my pasta. It makes a gorgeously quick tasty meal and all you need to do is add some tinned tomatoes, a chopped onion, a bit of basil, some garlic and fish, chicken, or shellfish to turn a boring meal into something with a bit of a spark. I often turn to it when I’m strapped for time after a busy day at work.

I’m getting into my stride with my vegetarian recipes now and came across this recipe for risotto. I do tend to “mix and match” by adding chicken, smoked fish or shellfish; adding extra vegetables such as peas, sweetcorn, mushrooms or finely chopped sweet peppers; and changing the herbs, preferring dill or tarragon with my fish instead of sage, or adding some coriander and cardamom with the chicken. It’s one of those dishes you feel you just need to tinker with!
