I love carrot cake and this recipe is a slightly different version to the one I normally use. It requires some basic baking knowledge and not everyone has brown flour or light brown sugar to hand, but it’s well worth making if you’re having friends round for morning coffee or afternoon tea or, if you’re like me, tend to have your "clan members" over for Sunday tea!

This recipe is great as it’s so versatile. It can be served hot or cold; on its own as a cake; with butter as a moist fruit loaf; or as a pudding with custard, cream or ice cream!

This is a recipe I’ve used for years and can be altered to add different flavours: sometimes I’ve added a little almond essence into the mix with cherries to make yummy cherry scones. Depending on how big you make them, the quantity will vary, I tend to end up making between 12 and 15 in a batch.

This works well as a Christmas cake, or a fruit cake to decorate for special occasions. We made this at school, using the mixture to make mini cakes as well which were fun. It stores quite well, in an airtight container, and you can add different dried fruit or mixed peel as well!
