Perfect Meringue
The perfect meringue is easy to make and beats the heck out of store bought whipped topping. Homemade meringue is just what you want to top that delicious hot pie or custard, be it berry, fruit or chocolate. This golden topping will be just the right touch for a special family dinner or any occasion.
Meringue should be delightfully light and luscious. Whipped grocery store topping cannot compare with your hand whipped meringue. It’s delicious on parfaits, pies, tarts, custards and cakes. The key to perfect meringue is beating the egg whites by hand. You’ll get more volume and it will take about seven minutes of beating by hand.

Wash both bowl and whisk and dry them with a clean towel.
Set bowl of whites over a larger bowl of hot water.
Beat 3 egg whites till light and foamy.
Whisk in 1/2 teaspoon of vanilla.
1/4 teaspoon of cream tartar
1/4 teaspoon salt until well blended.
Whisk to peaks or if you insist you can use an electric mixer on medium high speed.
Whip rapidly until whites begin to mound.
Whip in 1/2 cup of sugar, one tablespoon at a time.
Whip until glossy and meringue does not move when bowl is turned up.
Tips of meringue should turn up slightly.
You now have a perfect meringue. Turn it out on hot pie filling and spread with spatula from center to edges and seal to crust all the way around.
Pop pie in a 350 oven until the top is golden.
Watch is carefully or it will burn before you know it.
Let pie rest in refrigerator for two hours before serving.
Serves eight
For a cold pie, cake or custard, top with meringue but don’t put in the oven. It will still be delicious.

Homemade is really better. I like to whip up my own meringue, And you should watch closely while in the oven. It only takes a few seconds to go from golden to black.
