Gena’s Vietnamese Spring Rolls (Goi Cuon)
Fresh spring rolls are a healthy, satisfying treat that is great kids and adults to eat their veggies. These spring rolls can be filled with fresh herbs, veggies and all different meats and all wrapped with rice paper, so easy to eat and easy to prepare.
Ingredients:
For the Filling:
- 500grams of preferred meat. You can use you own preferred meats and/or prawns likes and some cooked pork (but you can use grilled pork, chicken mince etc), I prefer to use large cooked prawn and pork
- 500grams large cooked shrimp – peeled, and cut in half
- 1 packet rice vermicelli (noodles)
- About 10 rice paper wrappers
- Lettuce leaves chopped
- 1 Large Cucumber, cut into long slices
- (optional) is Bean sprouts
- 1 1/3 tablespoons chopped fresh basil
- 3 tablespoons of chopped fresh mint leaves
- 3 tablespoons of chopped fresh hot mint
- 3 tablespoons chopped fresh cilantro
Method:
1. In cook your meats and prawns if its not already cooked.
2. In a large bowl of warm water, dip each rice paper wrapper for about 3-5 seconds to soften (depending on rice paper thickness). Do not over soak your rice paper wrapper! Place on work service and allow rice paper to soak up water and become gelatinous and pliable (about 30 seconds to 1 minute, again, depending on the thickness rice paper).
3.Lay the wrapper flat and In a row across the center, lay some lettuce on the bottom as this gives you additional strength to the wrapper (so it doesn’t split the paper). Then place a handful of vermicelli , basil, mint, cilantro and other veggies then the meats and then place 2 shrimp halves on top, leaving about 2 inches uncovered on each side
4. Fold uncovered sides inward, then tightly roll the wrapper, beginning at the end with the lettuce. Repeat with remaining ingredients.
5. Serve with hoisin peanut dip. Please follow recipes below
Hoisin Peanut Dipping Sauce Recipe
1 cup (8 oz) hoisin sauce (if sauce is thick, add about 1/4 cup warm water to reach desired consistency)
1/4 cup crunchy peanut butter (gives it more of a crunch- if you like just a smooth texture then use the smooth peanut butter)
1 Tbs rice vinegar (optional for an extra tang)
2 garlic, crushed (exempt it if you don’t like the garlic taste)
1 minced chili, or more for desired spiciness
Method: In a small saucepan, bring all the ingredients together and stir in till it simmers, stirring constantly until all is combined smoothly. If it is too thick, continue to add some more water, little by little until desired consistency.

thanks for the feed back. You can use this dish with all veggies aswell, as it is a versatile reicpe and you can pretty much put anything in the rice paper wrappers. Good Luck and happy cooking =)
