*Better Than Bisquick* Biscuit Mix Recipe

Biscuit mix
- 4 1/2 cups all purpose flour
- 5 tablespoons baking powder
- 1/2 teaspoons salt
- 1 cup solid vegetable shortening
- 2 tablespoons sugar
- 3/4 cup instant dry powdered milk
Sift first 3. Cut in shortening with mixer until mixture is like cornmeal. Add last 2 and mix well. Store in tightly sealed container in a cool place for up to 2 months.
Great for biscuits and muffins.
Biscuits. 2 cups of mix and 1/2 cup of water. Preheat the oven to 425. Add water all at the same time. Stir just until dry is wet. knead lightly 4 or so strokes on floured board. Roll out 1/2 inch thick and cut out biscuits. Bake on ungreased baking sheet about 10 minutes until lightly browned. Makes a dozen.
Muffins
1 cup mix, 2 tablespoons sugar, 1 beaten egg, and 1/3 cup water. Preheat oven to 400. Mix together first two, add egg and water stirring just till moist. Put in greased muffin tins 3/4 full. Bake 20 minutes. Makes 6.

My mother used this as a staple to feed me and my eight siblings in our youth.I can still see her making these and shooing us out of the kitchen or get in there and help her.We all ran but gobbled up her biscuits with an amazing speed.Will have to try this though I probably wont do as good as my mother putting strawberry jam on them.
