Cornflakes Pineapple Muffin

Cornflakes make a yummy and healthy breakfast cereal. Not only that, they are also a special secret ingredient for cakes or muffins. Well not so secret now, here is one recipe for a quick to prepare and tasty cornflakes pineapple muffin. Best serve hot for afternoon tea.

Ingredients:

200 gm plain flour

¼ teaspoon salt

1 teaspoon cinnamon powder

1 tablespoon double action baking powder

1 cup cornflakes cereal, finely blended

8 tablespoon desiccated coconut, toasted lightly brown

125 gm brown sugar

150 ml oil

2 egg whites

2 teaspoons vanilla essence

200 ml evaporated milk

100 ml water

250 gm pineapple rings, diced

Directions:

1.       Sift together flour, salt, cinnamon powder and baking powder

2.       Add in cornflakes and coconut then set aside for a while

3.       Whisk together sugar, oil, egg whites, vanilla essence, water and evaporated milk mixture

4.       Fold in cornflakes and pineapple mixture then mix well

5.       Pour batter into lightly greased muffin pan and bake in preheated oven 180 degrees C for about 25 minutes
