Low Calorie Banana Bran Muffins for Dieters

An extremely low calorie muffin recipe for people on a diet or weight loss regime.

Ingredients

  1. 1 Cup Sifted All Purpose Flour
  2. 3 Tablespoons Sugar
  3. 2.5 Tea Spoon Baking Powder
  4. 0.5 Tea Spoon Salt
  5. 1 Cup Whole Bran
  6. 1 Egg Whisked/Beaten
  7. 1 Cup Mashed Ripe Banana
  8. ¼ Cup Milk
  9. 1 Tablespoon Oil
  10. 1 Teaspoon Cinnamon Powder
  11. 4 to 5 Walnuts

Method

  1. Mix the eggs, Banana, Oil, Milk in a Bowl.
  2. Mix all the other dry ingredients together.
  3. Fold the wet and dry ingredients. Mix gently and it does not matter if a few lumps remain.
  4. Put batter in greased muffin trays.
  5. Fill each cup only up to 3/4 the level, as the batter will rise.
  6. Put in pre-heated oven at 250 Degree C and bake for 25 to 30 Minutes, or until golden brown from top.
  7. Do the skewer test before removing from the oven.
  8. Serve hot. Goes very well with honey as an accompaniment for kids.
