Low Calorie Banana Bran Muffins for Dieters

An extremely low calorie muffin recipe for people on a diet or weight loss regime.
Ingredients
- 1 Cup Sifted All Purpose Flour
- 3 Tablespoons Sugar
- 2.5 Tea Spoon Baking Powder
- 0.5 Tea Spoon Salt
- 1 Cup Whole Bran
- 1 Egg Whisked/Beaten
- 1 Cup Mashed Ripe Banana
- ¼ Cup Milk
- 1 Tablespoon Oil
- 1 Teaspoon Cinnamon Powder
- 4 to 5 Walnuts
Method
- Mix the eggs, Banana, Oil, Milk in a Bowl.
- Mix all the other dry ingredients together.
- Fold the wet and dry ingredients. Mix gently and it does not matter if a few lumps remain.
- Put batter in greased muffin trays.
- Fill each cup only up to 3/4 the level, as the batter will rise.
- Put in pre-heated oven at 250 Degree C and bake for 25 to 30 Minutes, or until golden brown from top.
- Do the skewer test before removing from the oven.
- Serve hot. Goes very well with honey as an accompaniment for kids.
