Bite Size Ham, Swiss and Chive Quiche

These tiny bite-size quiche are perfect any time that hunger strikes. They are simple to prepare and served with a salad, they become a quick and nutritious meal.
Ingredients
- 6 large Eggs
- 6 oz Chopped Ham
- 8 tbsp shredded Swiss Cheese
- 2 tbsp chopped Fresh Chives
- Salt and Pepper to taste
- 3-4 tbsp Heavy Cream
- Non stick cooking spray
Method
- Whisk eggs , cream and salt and pepper together until light and fluffy ( they should be light yellow) and set aside.
- Spray Mini Muffin baking tins with non stick spray and evenly distribute the ham, cheese and chives.
- Pour egg mixture over top and bake in medium hot oven until set.
- Let cool 2-3 minutes before removing from baking tins.
