Bite Size Ham, Swiss and Chive Quiche

These tiny bite-size quiche are perfect any time that hunger strikes. They are simple to prepare and served with a salad, they become a quick and nutritious meal.

Ingredients

  • 6 large Eggs
  • 6 oz Chopped  Ham
  • 8 tbsp shredded Swiss Cheese
  • 2 tbsp chopped Fresh Chives
  • Salt and Pepper to taste
  • 3-4 tbsp Heavy Cream
  • Non stick cooking spray

Method

  • Whisk eggs , cream and salt and pepper together until light and fluffy ( they should be light yellow) and set aside.
  • Spray Mini Muffin baking tins with non stick spray and evenly distribute the ham, cheese and chives.
  • Pour egg mixture over top and bake in medium hot oven until set.
  • Let cool 2-3 minutes before removing from baking tins.
