Gena’s Easy to Make Carrot Cake
This recipe I prefer using oil. Cooking the cake mixture with oil makes the cake really soft and moist.
I like to use more carrots as well into my mixture. Makes it feel as if I have a nice home made cake, which in fact is Home Made.
Utensils: 18 cm round pan
Mixing bowl, spoon and measuring cups
Ingredients:
1 cup of oil (or melted Butter)
1 Cup of Brown sugar (or raw sugar or even white sugar if need be)
2 Eggs
2 cups of grated carrot (Add more Carrots if you prefer a more carroty and orange texture)
1 1/2 cup of self raising flour
1/2 cup of chopped nuts (use your preferences of nuts)
1/2 teaspoon vanilla or vanilla essence
1/2 teaspoon cinnamon
Oven temperature: 190c
Cooking time 50 Min’s to 60 mins
Method:
1) Set oven to 190c
2) Combine together the oil, eggs and sugar and mix all well till it becomes creamy
3) Add all other ingredients and fold in well
4) Pour the mixture into the prepared cake pan and place into the oven to bake at 190 c for approximately 50 Min’s to 60 Min’s or till more of a golden brown look(even ones preference is different.
5) Take out the cake and cool the cake on cake cooler. Then you can make icing for the cake if preferred.
