The Simple Christmas Cake
Yummy Time.
Though there is still three full months left for Christmas, I’m able to feel the spread of happiness and Christmas talks like shopping in the air everywhere. Since I’m not a Christian, I don’t know much about Christmas celebrations. But one thing I know from my young age is “Christmas Cake”. We used to get lots of cakes from all the Christian families living around us. One of my next house aunties once told a simple recipe to make Christmas cake. It is a quick and easy to make cake.

Ingredients
- Egg – 4
- All purpose flour – 500 grams
- Butter – 300 grams
- Sugar – 300 grams
- Vanilla Essence – 5 to 6 drops
- Cashew nuts – 20 pieces
- Dry Grapes – 20 pieces
- Cloves, Cardamom and Cinnamon – Each 2 pieces.
- Baking Powder – a little
- Grated fruit peels like Orange, lemon, papaya mix – 2 cups
Method
First we need to prepare the Caramel part.
Place 5 tbsp of sugar in a pan and stir it until the sugar gets melted. Pour 5tbsp of water when the sugar turns into dark brown in color and keep stirring till the caramel syrup becomes thick.
Next is cake making.
Take a microwave safe bowl and put the butter in it. Heat it for a minute, to melt the butter. After that, add the all purpose powder, sugar, eggs, vanilla essence and baking powder. Beat them well until it become equally mixed. Then add the syrup prepared earlier with this mix and mix it well again. Grind the cardamom, cloves and cinnamon pieces into fine powder and add it to the cake mix. Beat all together.

Finally add the dried fruits, dry grapes and cashew nuts and mix them well (not beating, just mixing is enough after this stage).
Pre Heat the oven for 5 to 10 minutes. Now spread the mixture evenly on the baking tray. Decorate it with left over dried fruits and cashew nuts and bake for 45 minutes at 180 degree centigrade.
