Crunchy Edamame Slaw: Cool Beans

This recipe is a great way to sneak your kids some healthy vegetables. It serves eight healthy portions.

Ingredients:

¼ cup chopped cashews
¾ cup mayonnaise
1 Tbsp sesame seeds
2 Tbsp white wine vinegar
1 Tbsp soy sauce
2 tsp sesame oil
2 tsp honey
4 cups of shredded red cabbage
2 cups of fully cooked edamame soy beans
1 cup of grated carrots
1 cup of diced cucumber
¼ cup chopped cilantro
¼ cup of chopped green onion
1/8 tsp salt
1/8 tsp white pepper

Method:

1. Preheat oven to 350 degrees. Toast cashews 5-6 minutes in a single layer.
2. Whisk together mayo and all other liquid ingredients.
3. Add remaining ingredients and stir well.
4. Cover and chill 4 hours.
