Healthy Zucchini Pancakes

Get the goodness of zucchini in your breakfast by adding it to your pancakes! They make them surprisingly delicious and moist!

Healthy Zucchini Pancakes Recipe

Ingredients:

-2 cups grated zucchini

-2 beaten eggs

-1/4 cup chopped onion

-1/2 cup flour

-dash of baking powder

-1/4 tsp oregano

-1/4 tsp garlic powder

-salt and powder to taste

Directions:

Place the zucchini in a strainer and get out all of the liquid you possibly can. Combine this with the eggs and onion. Mix in the dry ingredients to form a batter. Heat an oiled pan and drop the batter by spoonful onto it. Brown each side very quickly. Serve immediately for best results. Enjoy!

Serves: 4

Time: 10-15 minutes

    When I read the title I was envisioning real pancakes. I’ve never thought of putting onions, garlic or oregano in pancakes. I’ll have to try it sometime.
