Make Ahead Mashed Potatoes

This wonderful recipe can be made ahead so its perfect for those busy holiday occasions. Serves 10 -12 people.

Make Ahead Mashed Potatoes

Ingredients:

6lbs of Russet Potatoes

5 Cloves of Garlic – minced

1 Cup of Sour Cream

6oz. of Cream Cheese

4 green onions – thinly sliced

2 tbsp. butter

Salt and Pepper to taste

Directions:

Peel and quarter the potatoes and place in a large saucepan along with the garlic and salt to taste. Cover with water and bring to a boil. Reduce heat and cook the potatoes until they are fork tender about 25 – 30 minutes.

Drain the potatoes and transfer to a large bowl. Add all the other ingredients and mash everything together. Spray a large baking dish with nonstick cooking and transfer potato mixture into the dish. Cover and refrigerate overnight or for up to 3 days.

When ready to heat, preheat oven to 350 degrees and bake for 30 to 40 minutes until heated all the way through.

    What a great recipe! I love the fact that you can make them ahead. A great add to my Christmas menu, I think.
