One Pot Meal, Salami Stir Fried Rice for Two

A fast recipe for one pot, serves two people and involves a cup of leftover rice, so next time you make rice, make an extra cup.

One Pot Meal, Salami Stir Fried Rice for Two

This can be made in a large fry pan or a wok.  Beat 3 eggs, heat 1 tbs sesame oil in fry pan, fry beaten eggs topped with coarse black pepper, then remove to chopping board and slice into 1/2 inch squares and save Add 1 tbs sesame oil to fry pan and toss in 1/4 cup chopped onion, 2 tbs chopped garlic and stir fry 2 minutes,  Use 2 slices of Salami, cut into 1/2 inch squares, add to fry pan and stir fry 1 minute. Add 1 cup of fully cooked brown rice (leftover refrigerated rice works fine or use one package of Uncle Ben’s Ready Rice ) stir fry 1-2 minutes Add 1 can of peas and carrots, stir fry another minute Sprinkle all with Five Spice Powder (about 2 teaspoons), stir thoroughly Stir in Bragg Liquid Aminos (or Soy Sauce) about 1-2 tablespoons, stir thoroughly Toss in reserved chopped fried egg, toss thoroughly, remove from heat and serve immediately!
