Gena’s Chocolate Crackles and Fruity Chocolate Crackles

Chocolate crackles (also is known as Chocolate bubble cakes) are a but hit and are very popular among the kids as they are easy to make and taste so good.
They are good for small parties and the kids can help make this as well.

Utensils:

Paper patty cases

Small saucepan

Mixing bowl

Mixing spoon

 

Ingredients :

5 cups Rice Puffs or similar to Rice Bubbles cereal

1 1/3 cups icing sugar

1 1/2 cup desiccated coconut

250g copha, chopped up (for convenience of melting faster)

4 tbsp of chocolate cocoa

Method

1)     In a large bowl, mix together the dry ingredients.

Rice puffs, icing sugar, chocolate cocoa  and the desiccated coconut.

2)     Slowly melt the copha in a small saucepan over a very low heat, stir it constantly to allow it to melt

3)     Allow to cool slightly but not till too cool as it might be too hard to mix in with the dry ingredients

4)     Now add the melted Copha to the Rice Puff mixture, stirring until well combined and all fully coated.

5)     Spoon mixture into paper patty cases and refrigerate until firm.

6)     Ready to serve and eat

Fruity Chocolate Crackles

 Ingredients :

Same ingredients as the chocolate crackles plus some additional ingredients which are as follows

1 cup of mixed dried fruit (like apricot, sultanas, etc)

1 tsp cinnamon

¼ cup of mixed nuts (optional)

Method

Follow the steps as chocolate crackles and in step 4

1)     Now add the melted Copha to the Rice Puff mixture, plus the mixed dried fruits, cinnamon and mixed nuts stirring until well combined and all fully coated.

2)     Spoon mixture into paper patty cases and refrigerate until firm.

3)     Ready to serve and

    Sounds good but what is copha? Is it butter?

    Hi Ruby,

    Copha is vegetable shortening made of solidified coconut oil. The product is used in cookies and other desserts. While infrequently used in the US it is quite popular in Australia.
    Ingredient Substitutions
    Try substituting coconut butter. Vegetable shortening is poor, flavorless substitute.

    I hope that helps a little. If you cant find any of those, try using melted chocoate, but it makes it really a rich choclate taste

    It’s not only popular with kids, I love these, haven’t had them in years. I can’t remember what it is, but we have another name for copha in NZ.

    They look nice. I actually followed the fruit free guide and ended up with some less than great crackles cause I used the wrong cocoa powder lol.
